What do you grow outside during winter period?
In winter, we grow cold-tolerant crops outdoors. These include big brassicas like broccoli, cabbage and cauliflower, as well as winter lettuces such as romaine, oak leaf and Lola, and leafy greens like kale, arugula, mizuna and komatsuna. Herbs such as cilantro, parsley and chervil thrive too, and we add color with cold-tolerant edible flowers like stock flowers. Our farm stays above 5°C in winter, so we can grow outdoors all year round.
