Food security. In a world where inflation is never-ending, water and resources are compromised, and grocery stores are lacking fresh produce it’s so rewarding to step away from that and take control over our fresh produce.
Is it perfect, no. Is it always easy, no. But the most worthy things in life never are and after being a gardener in the soil for 20 years I can say with certainty this is WAY easier and far more fruitful! Especially since we can grow year-round.
For this recipe, I added celery, radish, and dill from the Tower Gardens to some new potatoes that were lightly steamed. I’ve topped it with homemade plant-based mayo, but I’ve also included the egg-based version for you below.
Plant based mayo:
1/2 cup aquafaba (water from chick peas)
2 teaspoons lemon juice or apple cider vinegar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon Dijon Mustard
1 cup oil
For the animal-based recipe replace the aquafaba with 1 egg.
