Dehydrated greens can be a lifesaver….in more than one way!
First, they save me from chips if I’m dying for something savory salty, and crunchy.
Second, they can save your body from damage. They are a powerhouse of nutrition to fuel your body, they are full of antioxidants to cleanse your body, and they have an affinity to the liver so they are great for a gentle and constant liver detox.
You can make these with any dark leafy green but endive is such an amazing plant and can be grown for just pennies.
Recipe: drizzle your curly endive with REAL olive oil and a heafty pour of apple cider vinegar. Next massage the leaves until they are coated and have absorbed all the vinegar. To finish them off you will cover them with a pinch of salt and nutritional yeast. How much nooch is totally up to you!
The last step is to dehydrate them. I prefer to use a dehydrator that has a raw food setting with temps no higher than 105. This ensures we are keeping all the amazing raw benefits and enzymes intact. They are done when they are completely dry and crispy.
This particular variety of endive from @bakercreekseeds is De Louviers. I have found this variety to thrive all year and doesn’t even get bitter in the summer. It’s my all-time favorite right now….I’m slightly obsessed
Sadly, this isn’t a green you are likely to find at the grocery store because grocery stores don’t stock many nutrient-dense leafy greens. Greens at the store are also old, contaminated, and most likely modified if you aren’t buying organic. Even with organic though the standards are VERY low these days.
If you are trying to use food to heal……I’m just going to be bold and say it…….you HAVE to be growing your own or seeking out local farmers. Especially when it comes to greens.

Also, and this is important, olive oil at the grocery store is adulterated with cheap seed oils without your consent. Without labeling. I trust @bonafurtuna if you need a REAL olive oil source.
