I tossed these eggplants into the compost pile after the farm market, and I never removed the old roots. But look at this — the plants just started growing again on their own. New growth, new flowers, and another attempt at fruiting.

It’s wild what plants will do when they’re determined to keep going. These eggplants are such a perfect reminder of that.
