I Harvested Potatoes & Onions in My VEGO Raised Bed and Got AMAZING Results

Today I’m working in front of the high tunnel in my VEGO 9-in-1 raised bed, where I planted potatoes and onions late this past summer. They’re finally ready to harvest — and even though they went in late, the results were surprisingly good!

First, we’ll pull the onions, check which ones are ready, sort out the soft ones, and get the best ones curing in the high tunnel. Then we’ll dig into the potatoes — including some bigger-than-expected reds and whites hidden just below the surface.

After harvesting, I replant the raised bed with winter carrots and beets, which grow beautifully in cold weather when protected. I scatter the seeds, lightly cover them with soil, and explain why root crops thrive in winter here in Ohio.
