I love micro greens. One that i had never thought to grow came as a free sample packet of seeds from a big seed order.
It was Japanese giant red mustard.
I grew it and snacked on the babies as i thinned them. When they got big, they were a bit to hit and bitter for me and the family, but the microgreens were a lovely wasabi flavored hit! We loved them as microgreens, so i just grow about 3 or 4 big plants every year for the seeds. Just 3 to 4 plants gives me about a cup of seed.
So when im going a sushi night with family i start them about 7 to 10 days before. A sprinkle of them on sushi is as close to real wasabi as I’ve ever found. Its better then the green tube you can buy by far.
I was lucky and have tried real wasabi root when i lived in Florida. Its got that hot horseradishy kick but a green almost floral after taste. The red giant mustard microgreens are absolutely a must on sushi in our house now.
