    My grandfather was first son born in the us to Irish immigrants. My gran was worn in Germany so we have a lot of good American type corned beef recipes lol.
    If people have never tried making it, they are missing out.
    Another dish my grandpa loved was colcannon(spelling?) It was steamed potatoes and steamed chopped cabbage mashed together with lots of butter and bits of salty ham or salty sidepork or bacon.
    He was a potato guy for sure.
    My gran made these potato croquettes type dumplings that had a hunk of cheese and a toasted crouton in the muddle of a ball of mashed potato that was then dipped in bread crumbs and deep fried she served it with parsley sauce.
    I can remember corned beef being so inexpensive and now its become so expensive lol
